Presentation :

For several years now, champagne and sparkling wines in the broad sense have experienced unprecedented growth. The waltz of bubbles in a flute is no stranger to this incredible craze. The effervescence that shakes your glass generates a host of phenomena of unsuspected complexity, which awakens all your senses. This book offers you an overview of the phenomena that accompany a champagne tasting, from the uncorking of the bottle, to the bursting of a bubble, including the essential role of the glass in tasting.
Deeply inscribed in the collective imagination, the champagne bubble becomes a pretext for a scientific stroll that will take you into the fascinating world of dissolved gases, phase changes and moving fluids. You will discover the waltz of bubbles like you have never seen it before. Enjoy your trip to the heart of the excitement!
