Inaugurated within the framework of the UNESCO Chair “Culture and Traditions of Wine” at the University of Burgundy, the Rencontres du Clos-Vougeot have the major objective of understanding wine as a cultural product, a vector of civilization, of which informed consumption depends a true art of living and a philosophy linked to conviviality and sharing, humanist values ​​if there ever were one.

The tenth edition of the Rencontres du Clos Vougeot, entitled “Drinking wine yesterday and today”, took place at the eponymous château on September 29, 30 and October 1 , 2016. Drawing on research in various disciplines and on numerous current examples or from world history, around thirty international speakers discussed the ways of consuming this drink which has shaped societies and their evolution over time. Drinking wine yesterday and today does not only constitute a dietary or hedonistic gesture, even if everything related to consumption and taste constitutes a major element of this work. The way of drinking and the wine consumed over time also allows us to understand how the world's vineyards were built step by step and evolved over the course of History.

The first part of the work, entitled “The winegrower and his vineyard, towards a diaspora of vines and wine” proposes to follow, from Antiquity to the present day, from the Mounts of Lebanon to China via Bordeaux and Burgundy, the different actors in the construction and constant changes of the vitivinisphere, winegrowers or merchants, vineyard workers, producers or traders. The second part of the work “From wine food to wine flavor enhancer”, strives, using examples from philosophy, sociology, history, physico-chemistry or even history of the arts to identify this wine consumer in all his plurality. The third part of the volume returns to the present with the restitution of a round table on “The production and consumption of wines in the world”. A synthesis, supplemented by geographical examples, highlights numerous changes, initiated or already completed.
