The transcript of this exchange was published as a dialogue written for the first time in 1998 by publisher Jean-Paul Rocher. As this book is no longer available, this is a new edition and the first in the “Jules Chauvet” collection launched by the Epure / Marie Rocher editions so that the reflections of Jules Chauvet - having inspired many winegrowers, oenologists, scientists and more widely still - can continue to be read, transmitted and questioned.

The author

Jules Chauvet [1907-1989] was a wine merchant-breeder, based in La Chapelle-de-Guinchay in Beaujolais. In addition to his qualities as a winemaker and taster, he possessed skills as a chemist, acquired at the Lyon chemistry school and then from Otto Warburg, with whom he had a long correspondence. He worked in particular on yeasts, malolactic fermentation and carbonic maceration. A pedagogue, driven by a great force of conviction, he is considered today as the father of the natural wine movement. He left a scientific work on the chemistry of wine and tasting, unique in the world.
