The author:

Christophe Beau has been a winegrower in Languedoc since the 1980s. Today with only three hectares of vines and a few orchards in care, he lives in a discreet scrubland, a place of many fermentations. A constant explorer of agriculture and peasant knowledge, he has traveled through many regions of the world. Thus he periodically stays, pen in hand, on the back of the mountain range, where he endeavors to give birth to his vernacular wines.
