Initiated and organized by the UNESCO Chair “Culture and Traditions of Wine”, the only UNESCO chair in the world on the issue of vines and wine, the Rencontres du Clos Vougeot aims to
major objective of understanding wine as a cultural product, a vector of civilization, whose informed consumption is part of a true art of living and a philosophy linked to conviviality and sharing, humanist values ​​if there ever were one.
These twelfth Clos-Vougeot Meetings, which took place on October 4, 5 and 6, 2018, dealt with the theme “Singular vineyards and wines, from the unique to the plural”.
Drawing on research from various disciplines, around thirty international speakers discussed rare, sometimes unusual models of vineyards and wines around the world. From Georgia to the Jura, via Italy, Thailand, the Andean plateaus or Burgundy, all the contributions which punctuate this work are interested in what is being done and has been able to be done, today and throughout the world. history, the originality of certain wine-growing territories.
In, firstly, after having mentioned the very ancient origins of the vine and wine in Georgia, this collection presents a historical panorama of the different wines, vineyards or vitivinicultural practices having kept their specificities over time, such as the wine of the Ancient Rome on the Rosé des Riceys. Furthermore, we find wines at the origin of models “duplicated over and over again and developed over the course of History. This is the case for sailing wines, jar wines, great sweet wines with the pioneer Château d'Yquem, or even the Italian “supertoscans” model that appeared in the 1970s.
However, many of these atypical models come from natural constraints that human genius has been able to contain, or even sublimate. These vitivinicultural singularities are extensively treated in the second part of this work, from geographical and technical angles that are sometimes surprising and spectacular: the highest vine in the world in Argentina, floating vineyards of Thailand, raisined wines of the Cinque Terre, micro-vineyards of Lanzarotte , wines from Pacherenc du Vic-Bihl, ice wines in China... In addition, these singularities also come from adaptation to new cultural or economic contexts, like the fraudulent wines of the early 20th century or the “natural” wines today.
Finally, these acts give pride of place to Burgundy, at the same time unique, international model of Pinot noir and Chardonnay wines, plural and diverse, as much by its appellations, its history as by its “Climats”.
Thus, in this scientific work, the reader will be able to discover the genesis of certain atypical wines or be surprised by the originality of numerous vineyards as well as the incredible force of adaptation and innovation developed by wine civilizations.
