This book explains in detail the production methods of nihonshu. The result of the experience and research of its author (an agricultural engineer and oenologist), it describes all the techniques necessary for the production of a quality sake: raw materials, fermentation, maturation. The author:

Agricultural engineer, oenologist and graduate of HEC Paris. Judge for the Sake category at the International Wine Challenge. He has worked for one of the most prestigious sake producers in Japan: Sohomare, undisputed champion of the traditional "Kimoto" method.
