Presentation:
Far from being mistaken for Chinese rice alcohol, Japanese sake, or nihonshu, is a delicate and richly flavored beverage that is not unlike wine in its production and enjoyment.
This book explains in detail the production methods of nihonshu. The result of the experience and research of its author (an agricultural engineer and oenologist), it describes all the techniques necessary for the production of a quality sake: raw materials, fermentation, maturation. The various aspects of tasting are also discussed, while numerous cultural asides help us discover the history of sake and its role in Japanese society. At the end of the book, a glossary summarizes the main technical terms encountered and a guide reveals a selection of emblematic sakes available in France.
The author:
Agricultural engineer, oenologist and graduate of HEC Paris. Judge for the Sake category at the International Wine Challenge. He has worked for one of the most prestigious sake producers in Japan: Sohomare, undisputed champion of the traditional "Kimoto" method.
