The trees are planted on a terrace and produce Moraiolo and Frantonio varieties. They are harvested in November at full maturity and immediately pressed at the La Pieve stone mill located near the estate. The pressing is done without heating or using any device to improve the extraction. After a short decanting period, the olive oil is bottled without filtration in order to preserve its aromatic potential and organoleptic qualities.
