Presentation:

Historical, cultural and gastronomic, the ambition of this beautiful work is to reveal the empirical knowledge of committed winegrowers, to testify to the enthusiasm for simple and singular but always fair food-champagne pairings and, beyond that, to register the fabulous history of Champagne in an adventure of tastes, from a Blanc de Noir to an Extra-brut via a Rosé, a Coteaux Champenois to an old vintage.

Synonymous with celebration, conviviality, lightness, Champagne certainly is, but confining it to this role of "pleasure wine" would be reductive. Faithful companion to any aperitif or end of feast, inviting it to accompany a whole meal is certainly a good idea! Coming from the northernmost vineyard in France, subject more than elsewhere to the vagaries of the climate - spring frosts and summer rainfall - the production of each cuvée requires professionalism and know-how, far from the frivolous image of which it is too often unfairly decked out.

Fruit of centuries of passion and work to produce this exceptional wine, Champagne is constantly reinventing itself. To meet new consumer demands or to reach new audiences, but also to deal with increasingly frequent climatic hazards. With always the quest for more authenticity, traceability and respect for the environment. It is with this in mind that nine women in Champagne created the collective La Transmission.Around La Transmission we find 35 artisans, producers, amateur cooks and big names in gastronomy; 1 historian and 1 photographer.

Almost exclusively savory, the recipes draw their inspiration from the family or professional stories of the women of La Transmission and highlight Champagnes from the best known to the rarest, in classic or daring alliances, always creative. 10 families of champagnes; 70 cuvées or vintages; 80 recipes and 80 pairings; 240 photographs; archival documents; 9 portraits; 8 appendices and wine, historical or Champagne chronologies.

From the exchange with these women, as professional as they are determined, this book was born. It tells the story of this most famous wine in the world, through the prism of La Transmission and the values of Champagne and Champagne, which this collective embodies and carries high, with sharing and pleasure as its leitmotif.
